by now just about everyone has heard about the e.coli scandal that has rocked the organic farming industry. I was amused to find that the mache at the grocery outlet had been marked with a fluorescent orange “does not contain spinach” sticker! as if the label clearly marking the package as mache was not enough. I used the mache in place of spinach in what is normally my spinach salad with balsamic vinaigrette. mind you this is not because I’m afraid of eating spinach. it’s just because mache is yummy!
