Mojito marinade

Hi.

Not much craftiness has been going on over in this corner of the craft collective. What can I say... all of my creative energy has been going into exams and papers. This *cough* does not stop me from buying yarn, but I had to do it... I had a coupon and I needed something to replace the tweedy, cable obscuring blue yarn for the baby sweater.

Tonight I decided to cook some chicken and rice using this mojito marinade that I got at TJ's awhile ago. Don't let this happen to you. I simmered the rice and chicken together with the marinade. The combination of citrus flavors with rice makes the rice sour and the chicken was pretty bland.

It was much better the last time I used the marinade. I think that time, I actually marinated the chicken for awhile and then baked it together with some potatoes.
